Sugar & Vinegar Vegetable Salad

Great salad for hot summer days!

Ingredients
For the Dressing:
1/3 cup raspberry vinegar
1/4 cup sugar
2 teaspoons Dijon-style mustard
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons fresh basil, chopped
1/2 cup vegetable oil
  For the Salad:
2 cucumbers, peeled and chopped
1 green pepper, chopped
1 tomato, seeded and chopped
1/2 cup red onion, chopped
5 cups lettuce, torn

Directions
Process first 7 ingredients in a blender until smooth.  With blender running, add oil in steady stream; process until smooth.  

Combine all vegetables with lettuce.  Pour dressing over all, serve immediately.
