Aunt Betty's Nut Goodie Candy

Great Christmas candy, and tastes just like the Pearson candy bar!

Recipe by: Betty Ross (Knowles)                                                            Yield: 64 pieces

Ingredients
12 ounces chocolate chips
12 ounces butterscotch chips
2 cups peanut butter
16 ounces salted peanuts
1/2 cup evaporated milk
1 cup butter
1 3-ounce package vanilla pudding mix (not instant)
2 pounds powdered sugar
1/2 teaspoon maple flavoring

Directions
Chill a jelly roll pan and line with parchment paper.  Melt chips and peanut butter until smooth.  Pour less than half of the mixture onto chilled jelly roll pan, spreading it evenly to the edges.  Add peanuts to the remaining mixture and set aside.  Combine the milk, butter and pudding mix in a medium sauce pan, cook over medium heat until boiling, boil for one minute.  Remove from heat and add powdered sugar and vanilla.  Blend well, and then spread over the chocolate mixture in the pan.  Pat down, and then top with the remaining melted chips and peanuts.  Cool completely, then cut into squares. 

Notes
Betty's original recipe called for 1 teaspoon vanilla versus the maple flavoring, but I think the maple makes it more like the actual candy bar.
