Crab Melts

Great appetizer for game day!
Recipe by: Amy Bradt                                                                    Yield: 10-12 servings

Ingredients
6 English muffins, split in half
4 ounces sharp cheddar cheese, shredded
3/4 cup mayonnaise
2 tablespoons butter
1/4 cup sliced green onion
1/2 teaspoon fresh chopped parsley
1/2 teaspoon minced garlic
1/2 teaspoon Old Bay seasoning
1/2 teaspoon Cajun seasoning (like Slap Ya Mama), to taste
4 dashes hot sauce, more or less to taste
Couple dashes Worcestershire sauce
1 1/2 teaspoons fresh lemon juice
1/2 pound fresh lump crab meat
chopped fresh parsley, for garnish

Directions
Use a toaster to lightly toast English muffins; set aside. Preheat oven to 350°. 

In a medium bowl, combine all of the remaining ingredients except crab until well blended. Taste and adjust seasonings. Gently fold in the crab meat and spread evenly between the English muffin halves. 

Place in preheated oven and bake for 8 to 10 minutes, until warmed through.  Place under broiler for about 2 minutes until lightly browned and bubbly (watch carefully so they don't burn!). Sprinkle with chopped fresh parsley.  Cut each muffin in quarters.  Serve immediately.
