Cheesy Cauliflower Bread Sticks

Since we're all on diets for the New Year, I've been searching for some low-carb recipes to try.  Cauliflower appears to be the magic ingredient in most recipes.  We tried this one tonight, and it was a hit!  Great gluten-free alternative to Pizza Hut's bread sticks, lots of flavor, and great crispy texture.

Ingredients
1 large head cauliflower (3½ cups grated) 
2 large eggs
2 cloves garlic, minced
1/2 teaspoon dried oregano
3 cups shredded mozzarella, divided
1/2 cup grated Parmesan
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon of crushed red pepper flakes
2 teaspoons chopped fresh parsley
Marinara, for dipping

Directions
Preheat oven to 425º.  Line a large baking sheet with parchment paper. On a box grater or in a food processor, grate cauliflower.

Transfer cauliflower to a large bowl with eggs, garlic, oregano, 1 cup mozzarella, parmesan, and salt and pepper. Stir until completely combined.

Transfer dough to prepared baking sheet and pat into a very thin crust. Bake until golden and dried out, about 20-25 minutes.

Sprinkle with remaining mozzarella, crushed red pepper flakes, and parsley and bake until cheese is melted and browned, 5 to 10 minutes more.

Slice and serve.

Notes
I used the chopped cauliflower from the produce section, and added a lot more red pepper flakes.
